About This Recipe
Our original cookie recipe, perfectly balance as the acidity from the lemon and tartness from the raspberries compliments the sweet white chocolate, creating the ultimate sweet treat!
Ingredients

6 tbsp Lemon Olive Oil
At the market
1/2 cup brown sugar
1 large egg
1.5 cup flour
1 tsp baking powder
1 punnet raspberries
3oz white chocolate chunks
Directions
Preheat oven to 356°F.
Into a bowl, add egg and sugar, then olive oil. Mix well.
Add flour, 1 pinch of salt and baking powder. Whisk until you have a smooth batter.
Add white chocolate chunks and mix to incorporate.
Shape cookies by scooping the dough with a spoon and placing them on a baking sheet, lined with parchment paper.
Press lightly on top and spread 2-4 white chocolate square and 2-3 raspberries on each cookie.
Bake in the oven for 10-12 minutes (they should be lightly browned). Place them on a wire rack to cool.
