About This Recipe

Impress your family when you serve these fancy and colorful French macarons with this simple fool-proof recipe featuring three of our sweet spreads - chocolate, pistachio and lemon - as the perfect fillings. Each bite is an amazing treat. Yum!

Modica Chocolate Spread
Pistachio Suprême
Lemon Curd
1/8 tsp Salt from Camargue

At the market
4 egg whites
1 2/3 cup confectioners' sugar
1 1/3 cup almond flour
1/4 cup superfine sugar
Brown food coloring
Light green food coloring
Yellow food coloring

Directions

Preheat oven to 280°F.

Line baking sheets with parchment paper. Sift the confectioners' sugar and almond flour in a bowl and whisk together.

Beat the egg whites with salt in a metal bowl with an electric mixer on medium speed until foamy, about 1 minute.

Increase speed to high and gradually beat in sugar, 1 tbsp at a time, until eggs whites are glossy and hold stiff peaks, 3 to 5 more minutes.

Gently fold almond flour mixture into whipped egg whites until thoroughly incorporated.

Divide the meringue into three bowls to color with a few drops of food coloring. Color one third brown, another third light green and the last in yellow.

Spoon meringue into a pastry bag fitted with a 3/8-inch tip. Pipe 1-inch disk of meringue onto baking sheets, spacing them 2 inches apart. Let them stand at room temperature for about 15 minutes, until the shiny surface become dull and a thin skin forms.

Place the baking sheets in the preheated oven and bake with the oven door open slightly, about 15 minutes. Let them cool completely.

Spread half the brown macarons with chocolate spread and top with remaining brown macarons.

Spread half the green macarons with pistachio suprême and top with remaining green macarons.

Spread half the yellow macarons with lemon curd and top with remaining yellow macarons.

Refrigerate at 2 hours before serving to let the macarons soften.
