A light and vibrant gazpacho blending peas, beans, and cucumber, offering a refreshing twist on the classic recipe—perfect for a fresh and flavorful appetizer!

Ingredients

Spanish Olive Oil
1 jar Espelette Pepper Olive Délice
1 packet Ciappe
Salt

At the market
9oz fresh or frozen peas
3.5oz fresh or frozen beans
1/2 cucumber
1 garlic clove
Pepper

Directions

Peel and cut the garlic into small pieces. Peel and cut the cucumber.

Heat 2 tbsp of olive oil in a saucepan. Add the garlic, peas, beans and cucumber.

Fry over low heat to coat all the ingredients with the oil. Season with salt & pepper and cover with water. Simmer for 15 minutes.

Blend and store in the fridge.

Serve iced with a drizzle of olive oil. Accompany with some ciappe spread with olive délice.
