Ingredients

Classique Olive Oil
Fig Balsamic Vinegar
1 jar Parmesan & Truffle Cream
At the market
11 oz speck
1 onion
1 egg yolk
21 oz spaghetti
Directions
Heat a pot of salted water. When the water boils, pour in the spaghetti and cook until al dente, about 8 minutes. Drain, reserving a ladleful of cooking water. Return the spaghetti to the pot.
Chop the onion and melt in 1 tbsp of olive oil, without browning. Pour in 1 tbsp of fig vinegar and reduce for 1-2 minutes.
In a bowl, beat the egg yolk with a fork. Add the cooking water, whisk and pour in the parmesan & truffle cream.
Add the onion and sauce to the pasta pot. Toss to coat well.
Add the speck, torn into small pieces, and season generously with pepper. Finish with a few drops of fig vinegar.
