The production of this "ripe" olive oil begins with the hand-picking of fresh, green olives. The olives then undergo a specific ripening process, with controlled fermentation before being pressed at the mill. This controlled fermentation gives the oil dominant aromas of tapenade, cocoa, and forest floor. "Ripe" olive oil is a French specialty, a cultural treasure prized for its rich flavor, velvety texture, and unique aromas.

This luminous green olive oil is made from Picual olives harvested very early, while still green, at the beginning of the season.
