A recipe for cold days to stay warm with greens.
Ingredients
At Oliviers&Co
2 tbsp Everyday Olive Oil
1 tsp Black Truffle Oil
A tsp Truffle Salt
Salt & Herbs mix for Pasta and Salad
At the market
4 shallots
1 bunch broccoli
25fl oz vegetable broth
Directions
Pour 2 tbsp of everyday olive oil into a saucepan.
Cut 5 shallots into small pieces and fry for 15 minutes
Add a bunch of broccoli cut into pieces.
Add a pinch of salt & herbs mix.
Add 25fl oz of vegetable broth into the pot. Let it simmer for 15 minutes on medium heat.
Use immersion blender to run it smoothly.
Finish with truffle oil & salt.
