The Monva estate has been established for four generations in the Sierra Mágina Natural Park (19,900 hectares).
The olive grove extends over 650 hectares, which benefit from clay-limestone soils with a gentle slope that make cultivation and the olive harvesting process easier.
By using local olives, the Montabes family can plan the harvesting season and control the production process at all times.
In this mill, crushing the olives less than 12 hours after harvesting at a temperature below 20°C results in the powerful and complex aromas that make their olive oils unique.
