Vegetable oils often undergo processes like refining, bleaching, and deodorizing (RBD) to remove impurities and increase shelf life. This refining process may involve the use of solvents and high heat, which can degrade some of the oil's nutritional value.

If your recipe calls for vegetable or canola oil, you should substitute those oils with gourmet extra virgin olive oil. Any dessert recipe that calls for vegetable oil as an ingredient is a perfect chance to swap it for olive oil. In these recipes, the swap would be a one-to-one ratio. In other words, if the recipe calls for one cup of vegetable oil, you would simply use one cup of extra virgin olive oil.
